Roasted Radish and Root Vegetable

INGREDIENTS
12 oz. - radishes
3 - sweet potatoes, peeled and cut into , approximately 3 cups
4 - parsnips, peeled and cut into 1 1/2" cubes, approximately 2 cups
2 - red onions, peeled and sliced into quarters
1 - clove of garlic, cut in quarters
3 tablespoons - olive oil
1 tablespoon - dried thyme
salt and black pepper added to your taste

METHOD
Preheat oven to 450°F.
In a large bowl mix potatoes, parsnips, onions, radishes, garlic, olive oil, salt, and pepper. Spread vegetable in a single layer in a 15 1/2" x 10 1/2" roasting pan. Bake until vegetables are golden brown, stirring occasionally. Cooking takes approximately 50 minutes. Place vegetables on a serving tray. Sprinkle with thyme.
